WINE MAKING PROCESS
The Engelgarten Le Jardin des Anges is produced using traditional Alsatian field blending, where multiple grape varieties are planted and harvested together. Viticulture is managed with biodynamic practices, including short pruning, plowing, and composting. The grapes undergo very slow, whole-cluster pressing for up to 12 hours. Fermentation occurs with indigenous yeasts in large, ancient foudres. The wine is then aged for 12 months on total lees in these foudres, allowing for the development of complexity and texture.
