WINE MAKING PROCESS
The production of Ennak 2022 involves distinct vinification processes for its grape varietals. Merlot and Tempranillo are fermented together at 16°C with limited skin contact, followed by malolactic fermentation in tank. Grenache and Carignan are fermented together with skins, also undergoing soft pressing and malolactic fermentation in tank. The wine is not aged in oak, preserving its youthful fruit character. Sustainable farming, dry farming, low yields, and hand-harvesting are integral to the vineyard practices. The wine is produced with low sulfite levels, significantly less than the allowed maximum.
