The Enrique Mendoza Pinot Noir 2023 is produced using grapes harvested manually in boxes. The winemaking process involves soft destemming, with whole grapes fermented in small stainless steel vats. Following fermentation, the wine is aged for approximately 10-12 months in French oak barrels from Allier, with a portion of these being new. Bodegas Enrique Mendoza employs environmentally friendly and sustainable viticulture practices, including avoiding chemical herbicides and pesticides, and adhering to organic farming principles.
