ABOUT THIS WINE
Domaine Rietsch, located in Mittelbergheim, Alsace, has been a family estate since the 17th century. Historically a mixed farm growing tobacco, fruit, and crops, the estate shifted its focus entirely to viticulture in the 1970s. Jean-Pierre Rietsch took over the reins in 1987, guiding the estate towards organic farming and a low-intervention, natural winemaking philosophy. 'Entre Chien et Loup' (meaning 'Between Dog and Wolf', referring to twilight) is a pure expression of the Auxerrois grape, showcasing the estate's commitment to producing living, expressive wines that reflect their terroir without chemical additives.

WINE MAKING PROCESS
The Auxerrois grapes are harvested by hand from organically farmed vineyards. In the cellar, the winemaking is extremely gentle and low-intervention. The grapes undergo a slow, direct pneumatic pressing. Fermentation occurs spontaneously using indigenous yeasts in foudres (large oak casks) and stainless steel tanks. The wine is aged on its fine lees for several months to build texture. It is bottled unfined and unfiltered, with absolutely no added sulfur dioxide (sans sulfites ajoutés), preserving its natural energy and raw character.
