WINE MAKING PROCESS
The winemaking process begins with hand-harvested, destemmed grapes that are chilled for 24 to 48 hours. Fermentation occurs in wooden, stainless steel, or concrete vats, with a maceration period of three to four weeks, utilizing twice-daily pump-overs and punch-downs. Following fermentation, the wine undergoes 24 months of aging in 228-litre oak barrels, with 50% of them being new. Some accounts suggest the entire wine is aged in oak barrels, followed by bottle aging.
