WINE MAKING PROCESS
The winemaking process for Esprit Blanc Brotte begins with direct light pressing of the grapes. The resulting must undergoes alcoholic fermentation in stainless steel tanks at low temperatures (16-18°C) to maintain freshness and fruit character; malolactic fermentation is intentionally avoided. Following fermentation, the wine is aged for six months in stainless steel vats on its fine lees. During this period, regular stirring (batonnage) is performed to enhance texture and complexity. The viticultural approach includes sustainable practices and strict winter pruning to manage yields.
