WINE MAKING PROCESS
The winemaking process for Eterno involves a partial appassimento technique, where a portion of the grapes are left to wither slightly on the vine to concentrate sugars and flavors. Following a careful harvest, the grapes undergo temperature-controlled fermentation and maceration on the skins to extract rich color and soft tannins. The wine is then aged in large oak casks ('grosses Holzfass') to polish its structure and integrate subtle oak characteristics before bottling.
