WINE MAKING PROCESS
Grapes for this Etna Bianco are cultivated on terraced vineyards at high altitudes on the northern slopes of Mount Etna. The harvest is manual, with grapes carefully selected upon arrival at the winery. After destemming and light pressing, the must undergoes cold clarification before fermentation at a controlled temperature of 15-16°C. The wine is then aged on its fine lees for about three months, typically in concrete and stainless steel tanks, to develop complexity and texture. The producer's approach centers on utilizing native grape varieties and respecting the unique volcanic terroir.
