ABOUT THIS WINE

WINE MAKING PROCESS
Eugenia Espumoso Blanco is produced using the traditional method, a technique typically reserved for wines like Champagne. After hand-harvesting the Hondarrabi Zuri grapes, primary fermentation takes place in stainless steel tanks with native yeasts under controlled temperatures to maintain freshness. The wine then undergoes a secondary fermentation in the bottle, followed by an extensive aging period of at least 36 months (including 12 months in bottle). This meticulous process develops the wine's fine bubbles, complex aromas, and refined texture, setting it apart within the Getariako Txakolina appellation.
