ABOUT THIS WINE
Clos Lapeyre Evidencia is a white wine from the Jurançon region of Southwest France, classified as Vin de France. WINE MAKING PROCESS
Clos Lapeyre Evidencia is produced using indigenous yeasts for fermentation, which occurs in barrels and foudres. The wine undergoes aging on lees for an extended period, either 12 months in barrels or 9 months in 600-liter demi-muids. Harvesting is done entirely by hand. The winemaking philosophy emphasizes natural processes and minimal intervention to allow the terroir to express itself. The estate follows certified organic and biodynamic farming practices.
