WINE MAKING PROCESS
Expression de Silex is produced from 100% Chenin Blanc grapes harvested by hand. The winemaking process involves slow, low-pressure pressing followed by a long, cool fermentation in stainless steel tanks. The wine then spends six months aging on its fine lees, with battonage performed as needed to build texture. No oak is used in the aging process, ensuring the purity of the fruit and the distinctive minerality derived from the silex soils.
