WINE MAKING PROCESS
Crafted using the traditional method from 100% Chardonnay sourced from the oldest vines on the estate's chalk hills. To preserve the natural, linear freshness and structural integrity required for long-term aging, the wine did not undergo malolactic fermentation. It was bottled in 2014 and underwent an extraordinary 11 years of lees aging before being disgorged in 2025, making it one of the longest lees-aged English sparkling wines ever released.
