WINE MAKING PROCESS
The Mayer Nebbiolo 2019 is produced using 100% whole bunch fermentation, with a portion of the grapes undergoing carbonic maceration. Fermentation is initiated by wild yeasts. Following fermentation, the wine is matured in seasoned hogsheads (old oak barrels) for a year, during which it remains on its lees. The wine is intentionally unfined and unfiltered, reflecting a winemaking philosophy focused on minimal intervention and allowing the inherent characteristics of the Nebbiolo grape and the Yarra Valley terroir to be expressed.
