WINE MAKING PROCESS
The production of the Kleine Zalze Family Reserve Chenin Blanc 2022 begins with grapes sourced from unirrigated, old bush vines in Stellenbosch. After a period of 12-18 hours of skin contact, the juice undergoes fermentation in a mix of 400L French oak barrels (second, third, and fourth fill), clay amphorae, and concrete eggs. No new oak was utilized. Post-fermentation, the wine is matured for an additional 8 months on its lees in these same vessels, contributing to its texture and depth.
