WINE MAKING PROCESS
The Fattoria Fibbiano Ciliegiolo 2019 begins with manual harvesting in mid-September. The grapes are gently destemmed and crushed before undergoing fermentation in stainless steel tanks for 10 days, utilizing indigenous yeasts. Following fermentation, the wine undergoes malolactic fermentation in cement tanks for 4 months. It is then aged for 12 months in Slavonian wooden barrels, followed by 4 months of bottle aging. Approximately 8,000 bottles are produced annually. The estate employs organic and sustainable farming principles.
