Félicette Grenache Rosé

The grapes are harvested from 25-year-old vines grown on clay-limestone and schist soils between the Pyrenees and the Mediterranean Sea. To preserve natural acidity and primary fruit aromas, harvesting occurs during the coolest early morning hours. The grapes undergo a short period of cold skin contact and maceration before being gently pressed in a pneumatic airbag press. Fermentation takes place at controlled cool temperatures over two weeks in stainless steel tanks. The wine is aged on its fine lees with periodic stirring to build texture, and malolactic fermentation is completely blocked to maintain a bright, crisp profile.
