WINE MAKING PROCESS
The winemaking process for this Fiano di Avellino DOCG begins with a full-cluster, soft pressing of the hand-harvested grapes. Fermentation takes place in temperature-controlled stainless steel tanks utilizing indigenous yeasts. Following fermentation, the wine is aged on its fine lees in tank. It then undergoes further aging in the bottle for a period before its release to the market. The estate practices organic viticulture.
