ABOUT THIS WINE
Filipa Pato, daughter of Bairrada's legendary winemaking pioneer Luis Pato, and her husband William Wouters, an acclaimed Belgian sommelier and chef, craft authentic wines in Bairrada, Portugal. Their joint philosophy, 'wines without makeup,' focuses on showcasing the pure, unadulterated character of indigenous Portuguese grape varieties. Sourced from the highly-regarded, ancient calcareous clay soils of Óis do Bairro, this biodynamic sparkling wine captures the cool, Atlantic-influenced maritime climate of the region, offering a distinctively mineral-driven alternative to traditional sparkling styles.

WINE MAKING PROCESS
The grapes are hand-harvested early in August to preserve high natural acidity and keep potential alcohol levels low. Following a gentle pressing of the whole bunches, the juice is statically decanted and fermented using only indigenous yeasts in temperature-controlled stainless steel tanks below 16ºC. The secondary fermentation takes place in the bottle according to the traditional method. The wine is aged on its lees for a minimum of nine months before disgorgement, and is bottled unfiltered with zero dosage to maintain its bone-dry, natural profile.
