WINE MAKING PROCESS
The 'Five Generations' Chenin Blanc undergoes natural fermentation, often with selected yeasts, in temperature-controlled environments. A significant portion of the wine is aged for 10 months in 400L French oak barrels, with a mix of new and older fills, alongside a concrete egg. Following this, it matures on fine lees for an additional four months, with monthly bâtonnage employed to build texture and complexity. Malolactic fermentation is deliberately avoided. The grapes are hand-harvested in the early morning at a precise sugar level, contributing to the wine's balance.
