WINE MAKING PROCESS
The winemaking process for Fleurie Madone 2020 begins with 100% whole cluster fermentation using a semi-carbonic method in truncated wooden vats, driven by spontaneous fermentation with natural yeasts. Maceration lasts for at least three weeks. The wine is aged for a minimum of 18 months in stainless steel tanks, followed by six months in three old 500-liter French oak barrels. Sulfites are added minimally at bottling, and the wine undergoes no fining or filtration. Viticulture is strictly biodynamic, with all vineyard work performed manually and without synthetic products, and yields are kept extremely low.
