ABOUT THIS WINE
Flying Cloud Cabernet Sauvignon 2021 is a red wine from Paso Robles, California, produced by Flying Cloud Winery, a second label of Stephen Ross Wine Cellars. The wine is primarily Cabernet Sauvignon (96%), with smaller additions of Zinfandel (2%) and Petite Sirah (2%). The label name, Flying Cloud, is inspired by the winemaker's childhood in Minnesota. The 2021 vintage was characterized by a late harvest with extended hang time, following a period of drought in the region. The grapes are sourced from Certified Organic vineyards, Jack Knife and Blind Faith.

WINE MAKING PROCESS
The Flying Cloud Cabernet Sauvignon 2021 is produced using classic Bordeaux vinification methods. Grapes are de-stemmed and crushed into small stainless steel tanks, where they undergo daily pump-overs during fermentation. The wine then experiences four weeks of skin contact before the free-run juice is lightly pressed. Following fermentation, the wine is aged for seventeen months in neutral French oak barrels. The grapes are sourced from Jack Knife Vineyard and Blind Faith Vineyard, both of which are Certified Organic.
