ABOUT THIS WINE
Flying Goat Cellars was founded in 2000 by Norman 'Norm' Yost, a veteran winemaker with over 40 years of cool-climate experience. Located in Santa Barbara County, California, the winery is named after Yost's two pet pygmy goats. Norm is affectionately known as the 'OG' (Old Goat) of Santa Barbara bubbles, having launched the region's first traditional-method sparkling program in 2005. This single-vineyard sparkling rosé is sourced from the prestigious, SIP-certified Solomon Hills Vineyard in the Santa Maria Valley, known for its sandy loam soils and intense maritime influence.

WINE MAKING PROCESS
Crafted using the traditional method (méthode champenoise), the grapes are hand-harvested early at low sugar levels to preserve high natural acidity. After whole-cluster pressing, the base wine is aged for 12 months in neutral French oak barrels. Secondary fermentation occurs in the bottle, followed by an extensive 36 months of aging on the lees (en tirage). The bottles are hand-riddled and finished with a minimal dosage of approximately 2 to 3 grams per liter, resulting in an exceptionally dry and precise sparkling wine.
