WINE MAKING PROCESS
The production of Fontana Candida Frascati involves harvesting grapes from mid-September onwards. The grapes undergo soft crushing and fermentation off the skins. The resulting must is cold settled before being fermented at controlled temperatures with inoculated yeasts. Post-fermentation, the wine is aged in temperature-controlled stainless steel vats. A nitrogen purge is employed during aging to prevent oxidation, preserving the wine's freshness before bottling.
