The name 'Fonte delle Donne' is linked to a historical fountain on the estate. Fattoria Fibbiano is recognized as the only winery in Italy producing wine from the Colombana grape.

WINE MAKING PROCESS
The winemaking process for Fonte delle Donne begins with a soft pressing of the grapes, followed by cooling the must with iced CO2 to prevent oxidation. Fermentation occurs in stainless steel tanks at a controlled temperature for about 30 days. Post-fermentation, the wine is aged for 6 months in cement tanks, followed by an additional 6 months of bottle aging. The grapes are hand-harvested in early September during the cooler parts of the day. Fattoria Fibbiano practices organic farming.
