WINE MAKING PROCESS
The 'Fossil' wine is produced using minimal intervention techniques. Grapes are gently pressed and undergo natural decanting. Fermentation is carried out using indigenous yeasts, with a minimal dose of sulphites. The wine is aged for approximately 20 months on its lees in stainless steel vats, without agitation or wood. It is bottled unfiltered.
