WINE MAKING PROCESS
The winemaking process for Castello Bonomi Franciacorta Dosage Zéro 2012 begins with manual harvesting of Chardonnay and Pinot Nero grapes. The grapes are gently pressed to obtain free-run juice. Pinot Nero undergoes its first fermentation in stainless steel tanks, while Chardonnay ferments in small oak barrels. Following the blend, the wine undergoes a second fermentation and matures in the bottle for over 50 months on its lees before disgorgement. This is a 'Dosage Zéro' style, meaning no sugar is added after disgorgement, preserving the wine's natural character.
