WINE MAKING PROCESS
Fundamentalista 2021 is produced using a field blend of grapes, hand-harvested from vines over 80 years old. The co-fermentation of all varieties is carried out using indigenous yeasts. Some vintages may include foot-treading and whole-cluster fermentation. Following fermentation, the wine is aged for approximately 10 months in 1000-liter clay amphorae. It is bottled without fining or filtration and with minimal sulfur dioxide additions.
