ABOUT THIS WINE
Fundamentalista is a tribute to the traditional field blends of Manchuela, crafted by Finca Sandoval. Located in Ledaña (Cuenca), the estate was founded by the late journalist Víctor de la Serna and is now guided by winemaker Javi Revert and Franck Massard. This wine represents a return to ancestral viticulture, sourcing grapes from 'La Casilla de Don Tomás,' an old-vine plot where multiple indigenous varieties grow co-planted. It captures the rugged, high-altitude terroir of Manchuela, offering a vibrant, authentic expression of the region's heritage.

WINE MAKING PROCESS
The winemaking for Fundamentalista focuses on minimal intervention to preserve the raw character of the field blend. Grapes are hand-harvested from the old vines of La Casilla de Don Tomás. Fermentation occurs spontaneously using native yeasts in stainless steel or concrete vats, often incorporating a portion of whole bunches to enhance freshness and aromatic complexity. The wine is aged gently in neutral vessels (concrete or old oak foudres) to avoid wood dominance, maintaining its bright fruit profile and mineral tension before bottling with minimal sulfur.
