WINE MAKING PROCESS
The Galateo Banyuls Rimage is produced as a Vin Doux Naturel, a fortified wine. The key technique is 'mutage sur grain,' where grape spirit is added to the fermenting must on the skins to stop fermentation and retain residual sugar and fruit character. This process is carried out in stainless steel tanks, adhering to a reductive winemaking approach to preserve freshness. Following fermentation and fortification, the wine is aged for six months in used 225-liter barrels before bottling, typically within 18 months of harvest. The grapes are hand-harvested in the early morning to maintain quality.
