WINE MAKING PROCESS
Gancia Prosecco Brut is produced using 100% Glera grapes from the Prosecco DOC region. The grapes undergo soft pressing followed by white vinification at controlled temperatures, typically around 18°C. The crucial second fermentation, which creates the sparkle, is carried out using the Martinotti (Charmat) method in large closed tanks at temperatures between 15-17°C. This method ensures the development of a fine and persistent perlage. Some production may involve a portion of juice fermenting in small French oak barrels before blending.
