Gato Negro Sauvignon Blanc

The winemaking process for Gato Negro Sauvignon Blanc involves harvesting grapes at a specific sugar level to maintain natural characteristics. A cold maceration period is followed by decanting at low temperatures. Fermentation occurs in stainless steel tanks below 14°C for 15-20 days to enhance citrus aromas and fruit intensity. The wine is then clarified, cold-stabilized, and filtered before bottling. Aging is also conducted in stainless steel tanks.
