WINE MAKING PROCESS
Gramona Gessami is produced using grapes harvested at night to preserve aromas. A cold pre-fermentation maceration is employed to maximize aromatic extraction. Fermentation occurs in stainless steel tanks at controlled temperatures, typically between 13-16°C. The wine does not undergo malolactic fermentation and has no oak aging. Following fermentation, it is aged for a few weeks on fine lees in tank. The fermentation is stopped using cold to retain a touch of residual sugar.
