ABOUT THIS WINE

The estate, a seventh-generation family operation, is a leader in biodynamic viticulture, with Jean-Louis Trapet at its helm. The 'Ostrea' cuvée is named for the Latin word for 'oyster,' possibly referencing a saline minerality. This wine is sourced from prime village plots within Gevrey-Chambertin, some with vines dating back many decades. The 2021 vintage is noted for its delicate, airy character, allowing for wines of purity and finesse.

WINE MAKING PROCESS
The Gevrey-Chambertin 'Ostrea' 2021 is produced using 100% Pinot Noir. Winemaking involves partial destemming (around 50%) and fermentation with indigenous yeasts. Extraction is achieved through gentle, slow infusion. The wine is then aged for 15-18 months in oak barrels, with new oak usage varying between 20-50%. Wines are not fined or filtered before bottling. The estate practices biodynamic and organic farming, emphasizing regenerative viticulture and no/low till methods. Grapes are hand-harvested.
