WINE MAKING PROCESS
The winemaking process for this Gewurztraminer focuses on preserving the delicate and highly volatile aromatic compounds of the grape. Grapes are harvested at optimum maturity from select vineyards near Colmar and Eguisheim, characterized by warm clay, limestone, and granite soils. After gentle pressing, the juice undergoes a slow, temperature-controlled fermentation in stainless steel vats. The wine is then aged on its fine lees (sur lie) to enhance its texture and complexity before being bottled in the spring following the harvest. It remains entirely unoaked to safeguard the pristine, vibrant fruit and floral characteristics of the variety.
