WINE MAKING PROCESS
The grapes for Gigondas La Louisiane are hand-harvested. Fermentation occurs in large, old cement tanks with extended maceration on skins, lasting up to 6-8 weeks. Following fermentation, the wine is aged for about 12 months in large, old foudres (50 hl). The wine is bottled unfined and unfiltered. Domaine Saint Damien practices certified organic viticulture, using natural products and organic fertilizers.
