ABOUT THIS WINE

His estate operates with a philosophy of minimal intervention, treating the vineyard as a balanced ecosystem. The Gilbourg cuvée is sourced from old Chenin Blanc vines, approximately 40 years of age, situated on clay-schist soils in Faye d'Anjou. WINE MAKING PROCESS
The winemaking process for Gilbourg begins with hand-harvested Chenin Blanc grapes that are directly pressed. Fermentation is initiated spontaneously using native yeasts. Following fermentation, the wine matures for around eight months in used oak casks and foudres. Throughout the process, minimal to no sulfur dioxide is added, and the wine is typically bottled without fining or filtration, adhering to a philosophy of minimal intervention.
