ABOUT THIS WINE
Giortì Spumante Extra Dry is a unique sparkling white wine from Cantina Sociale Copertino (Cupertinum) in Puglia, Italy. It is made from 100% Negroamaro grapes, a departure from the grape's typical use in red wines. The name 'Giortì' itself signifies 'Feast' or 'Party' in Greek, underscoring its intended role as a celebratory beverage. Cantina Sociale Copertino, established in 1935, is a cooperative of 300 vine-growers who cultivate approximately 300 hectares of vineyards in the Salento region. The winery's philosophy centers on preserving tradition while incorporating innovation, with Negroamaro being its most significant grape. The wine is produced in the Salento appellation, known for its clayey soils and flat landscapes.

WINE MAKING PROCESS
Giortì Spumante Extra Dry is produced using the Martinotti (Charmat) method. This involves a primary fermentation followed by a secondary fermentation in pressurized tanks, which creates the wine's characteristic effervescence. The grapes used are 100% Negroamaro, vinified in white. After the secondary fermentation, the wine undergoes filtration, dosage is added, and it is then bottled. The vineyard soils are described as clayey, situated on flat land at an elevation of 30 to 60 meters above sea level. Harvest typically occurs in mid-September.
