WINE MAKING PROCESS
The winemaking process for this Pinot Noir begins with hand-picked grapes that are destemmed and partially crushed. A two-day cold soak is employed to enhance color and flavor extraction before fermentation. During fermentation, each lot receives tailored attention through punch-down or pump-over techniques. The wine is made using free-run juice and subsequently aged for nine months in French oak barrels, with a portion of new oak. To preserve the wine's purity and texture, it is bottled unfined. The winery emphasizes sustainable and organic farming practices across its estate vineyards.
