WINE MAKING PROCESS
The 2023 Godfather is a skin-contact Pinot Gris produced using a meticulous three-stage harvest. Grapes were picked at different times to optimize acidity, structure, and vintage character. Following harvest, the grapes underwent extended skin contact, contributing to the wine's color and texture. Fermentation and aging take place on fine lees for about a year in old barrels within the estate's historical cellar. The wine is intentionally unfined and unfiltered, with only a minimal addition of sulfur at bottling, preserving its natural character and expressing the volcanic terroir of the region.
