WINE MAKING PROCESS
Gorrondona is produced using indigenous Basque grape varieties, primarily Hondarrabi Zuri. The grapes are destemmed and gently pressed before fermentation with native yeasts in temperature-controlled stainless steel tanks at 18°C. Each vineyard plot is vinified separately to capture its unique expression. Following fermentation, the wine matures on its lees in stainless steel tanks until bottling in January after the harvest. The winery practices organic farming and meticulous vineyard management, including manual harvesting into small boxes to ensure grape quality. Hondarrabi Beltza, a red grape, is also included in the blend, vinified as a blanc de noirs.
