WINE MAKING PROCESS
The winemaking process for this cuvée is defined by a strict zero-sulfur-added (Sans Soufre Ajouté) protocol from harvest to bottling. Grapes are completely destemmed and gently crushed before undergoing a short, temperature-controlled fermentation between 18°C and 22°C for 5 to 10 days to preserve primary fruit purity and keep tannins soft. Following a brief post-maceration to encourage malolactic fermentation, the wine is aged for approximately three months in stainless steel tanks. It remains completely unoaked and is protected from oxygen throughout racking to maintain its fresh, raw character.
