WINE MAKING PROCESS
Chapel Down Grand Reserve 2018 is produced using cool fermentation in stainless steel, followed by full malolactic fermentation. A portion of the wine is derived from reserve stocks aged in barrel and tank for enhanced complexity. It matures on fine lees for six months in tank before bottling, and then undergoes a minimum of three years of further aging on lees in bottle. The 2018 vintage benefited from a warm summer, contributing to the fruit's concentration.
