WINE MAKING PROCESS
The Grande Cuvée 1531 is produced using the Méthode Traditionnelle, the same rigorous process used for Champagne, which involves a secondary fermentation in the bottle. The vineyards are located in Limoux, a region with a long-standing tradition of sparkling wine production. Following fermentation, the wine undergoes an extended aging period of 24 to 36 months on its lees. This prolonged contact with the spent yeast cells is crucial for developing the wine's characteristic complexity, creamy texture, and fine mousse. The wine is unoaked, ensuring that the purity of the fruit and the nuances from the traditional method aging are preserved.
