WINE MAKING PROCESS
The production of Bonnet Grande Réserve Brut involves primary fermentation in temperature-controlled stainless steel tanks. Following this, the wine undergoes a second fermentation in the bottle, the traditional method for Champagne production, which creates its effervescence. The wine is then aged on its lees for a minimum of 30 months, a process that contributes to its texture and flavor development. Harvests are carried out manually to ensure grape quality. The estate is committed to sustainable viticulture, holding HVE certification and implementing practices such as reduced herbicide use and the use of horses in vineyards.
