WINE MAKING PROCESS
The Grasevina Mitrovac 2022 is produced using a 24-hour maceration period followed by fermentation in stainless steel tanks at controlled temperatures of 16-18°C. This process is designed to preserve the wine's aromatic intensity and freshness. Following fermentation, the wine undergoes approximately 10 months of aging in stainless steel tanks. The grapes are hand-harvested from old vineyards (30+ years) located in the Mitrovac vineyard, which features volcanic and sandy soils. Some vineyard management is conducted using horses to minimize soil compaction. The wine is then fined and filtered before bottling.
