WINE MAKING PROCESS
The Newfound Gravels California Red is produced using minimal intervention techniques. Grapes are fermented with 100% whole cluster and without the addition of cultured yeasts. The winemaking process emphasizes low extraction, and the wine undergoes no clarification or filtration. Following fermentation, the wine is aged for 14 months in large format oak barrels (500-600 liters or 20hL Foudres), with individual vineyard lots kept separate until the final blend is created.
