WINE MAKING PROCESS
The Greystone Barrel Ferment Sauvignon Blanc is produced using 100% Sauvignon Blanc grapes. Following a gentle pressing, the juice is settled before undergoing fermentation in old French oak barrels with wild yeast. This fermentation process takes seven months to reach dryness. Partial malolactic fermentation is also employed, and the wine benefits from lees stirring to enhance texture and depth. The wine is aged for seven months in 100% used French oak barriques and is estate bottled without fining.
