WINE MAKING PROCESS
The Grillo Blues Paolo Calì is produced using cold skin maceration followed by static cold clarification of the must. The wine is then fermented at 16°C. Post-fermentation, it undergoes aging on its own yeasts until bottling. The vineyards are cultivated on sandy soils. The winemaking is guided by a philosophy of minimal intervention, aiming to preserve the wine's integrity and its link to the territory.
