WINE MAKING PROCESS
The Grüner Veltliner Wachauwerk undergoes whole bunch pressing, followed by spontaneous fermentation with native yeasts in steel tanks. The wine then ages on its fine lees for 8 months in steel tanks. It is bottled without fining or filtration, with minimal sulfur addition. The grapes are cultivated following biodynamic principles and are harvested by hand with meticulous attention. Some bottlings may include a 600-liter Stockinger barrel.
