ABOUT THIS WINE
Adega Guímaro is a pioneering estate in the rugged Ribeira Sacra region of Galicia, northwest Spain. The name 'Guímaro' means 'rebel' in the local Galician dialect, a nickname given to the grandfather of current winemaker Pedro Rodríguez. The family has long worked these dramatic, steep river terraces as independent growers. In 1996, they helped establish the official Ribeira Sacra appellation. Today, under Pedro's leadership and inspired by collaboration with legendary winemaker Raúl Pérez, the estate is celebrated globally as a benchmark for Atlantic-influenced, mountain-grown Spanish wines.

WINE MAKING PROCESS
The grapes for this unoaked Mencía are harvested entirely by hand from steep, terraced vineyards with slopes up to an 85% incline, a practice known as 'heroic viticulture.' In the cellar, the fruit is partially de-stemmed and undergoes a brief cold maceration. Fermentation occurs spontaneously using indigenous yeasts in temperature-controlled stainless steel tanks. To preserve its vibrant primary fruit and mineral character, the wine is aged on its fine lees in stainless steel for four to eight months before cold stabilization and bottling, without any oak contact.
